Cauliflower Mash

See how to make the most delicious cauliflower mash, so that you never miss your potatoes again!
  • 1 ½ lbs cauliflower, cut into large florets
  • 4 garlic cloves
  • 2 (14-ounce) cans of reduced sodium chicken broth
  • Pepper to taste
  • 2oz fat free cream cheese (chive and onion flavor)
  1. Combine the cauliflower, garlic, and broth in a large sauce pan and bring to a boil.
  2. Reduce heat to low and simmer for 15 minutes.
  3. Drain the cauliflower.
  4. Place the cauliflower and garlic in a food processor and blend until smooth.
  5. Add in 2 oz of low fat cream cheese and season with salt and pepper to taste and serve.  Serves 4.
