- 1 ½ lbs cauliflower, cut into large florets
- 4 garlic cloves
- 2 (14-ounce) cans of reduced sodium chicken broth
- Pepper to taste
- 2oz fat free cream cheese (chive and onion flavor)
- Combine the cauliflower, garlic, and broth in a large sauce pan and bring to a boil.
- Reduce heat to low and simmer for 15 minutes.
- Drain the cauliflower.
- Place the cauliflower and garlic in a food processor and blend until smooth.
- Add in 2 oz of low fat cream cheese and season with salt and pepper to taste and serve. Serves 4.
