Chicken Cacciatore with Shirataki Tofu Noodles

Try this delicious Chicken Cacciatore with Shirataki Tofu Noodles. Low carb, good lean protein, rich flavor -- this one has it all!
  • 2 lbs boneless skinless chicken
  • Cooking spray
  • 1 medium green pepper and 1 medium red pepper cut into 1-inch pieces
  • 1 large onion cut into 1-inch pieces
  • 1 can (28 oz) diced tomatoes
  • 1 tsp dried oregano leaves
  • 1 tsp dried basil leaves
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  1. Heat a large skillet to medium-high heat and spray with cooking spray.
  2. Add the chicken to the skillet and cook until browned and cooked through.
  3. Once cooked through, remove the chicken from the skillet and place on a plate. Then add the onions, peppers and garlic to the skillet and cook over medium heat until softened.
  4. Add tomatoes, oregano, basil and salt and pepper to taste and mix.
  5. Return the chicken to the skillet and increase heat to high to bring contents in the skillet to a boil.
  6. Reduce heat to low; cover and simmer for 30 minutes.
  7. Place over a bed of Shiritaki Tofu Noodles (follow package directions to cook) as a low carbohydrate pasta alternative.
