Delicious Beet Greens

This is the best way to make beets that are not bitter, but positively delicious.
  • 2 bundles of fresh beets with stems and greens (only use the stem and greens)
  • 1 Tbsp olive oil
  • dash salt
  • ½ tsp pepper
  • 1 tbsp apple cider vinegar
  1. Remove the stem and beet greens from the beet (save the beet bulb for another dinner)
  2.  Steam in large pot for 15 minutes or until the beet greens and stems are tender.
  3. Remove from pot and place in a medium sized bowl and toss with olive oil, salt, pepper and apple cider vinegar.
  4. Serve alongside Halibut. See link below. Serves 6.
