Dill Cucumber Salad

Try this refreshing dill cucumber salad as your next dish, instead of the high-carb and high fat potato salad. This simple and cool cucumber salad is easy to make and perfect to prepare all year round! With just 7 ingredients, you can create this delicious salad without any of the guilt!

Ingredients

  • 2 large cucumbers, peeled and sliced thinly
  • 2 scallions, thinly sliced
  • 1 Tbsp lemon juice
  • 1/4 cup nonfat yogurt
  • ¼ tsp garlic powder
  •  ½ tsp salt
  • Fresh pepper to taste

Directions

1. Combine all ingredients in a large bowl and mix.
2. Cover with plastic wrap and refrigerate until ready to serve.
