Ingredients
- 2 lbs cod fillets (about 4oz each fillet)
- 1 small red onion, thinly sliced
- 2 Tbsp fresh dill
- 2 Tbsp fresh parsley
- ¼ cup fresh lemon juice
- 1 tomato, chopped
- ½ cup reduced fat feta cheese
- 5 kalamata olives, sliced
- Pepper to taste
Directions
- Preheat the oven to 350 degrees F.
- Use cooking spray to spray and coat a large casserole dish.
- Place the cod fillets in the casserole dish and top with all remaining ingredients.
